🍄 The Secret to Smoky Vegan Bacon - with All Natural Aussie Liquid Smoke

This recipe uses the "meaty" texture of portobello mushrooms combined with the intense flavor of liquid smoke to replicate bacon—without a smoker or any meat!

Mushrooms per 1 large Portobello Cap - wipe clean; do not rinse.

Sweetener - 1/2 - 1 Tbsp Maple syrup or sweetener of choice - essential for the classic salty/sweet balance.

Smoke liquid - 1 Tsp BBQ HQ Liquid Smoke - or to taste use Hickory for smoothness or Mesquite for bold flavor.

Oil -1 Tsp neutral good oil (Olive or Avocado) - this helps the mushrooms crisp up.

Sea or Himalayan salt - to taste - start with 1/2 tsp, you can add more after cooking.

Spices

1 tsp Garlic Powder

1 tsp Onion Powder

½ tsp Black Pepper

Instructions

  1. Prep & Preheat: Preheat oven to 175∘C (350∘F). Line a baking sheet with parchment paper.

  2. Slice Mushrooms: Remove the stem and slice the mushroom cap into thin strips, about 6mm(1/4 inch) thick. Keep them as even as possible for uniform crisping.

  3. Mix Marinade: In a small bowl, whisk together the maple syrup, liquid smoke, oil, salt, garlic powder, onion powder, and pepper.

  4. Coat: Place the mushroom slices in a shallow dish or large bowl. Pour the marinade over them and gently toss or brush to ensure both sides are completely coated. Let them sit for 5 minutes to absorb the flavour.

  5. Bake: Arrange the slices on the prepared baking sheet in a single layer (do not overlap them—they should roast, not steam).

  6. Bake for 15 minutes.

  7. Flip & crisp: Carefully flip each mushroom strip. Return to the oven and bake for another 10–15 minutes, checking them often. They are done when they are dark, fragrant, and crispy around the edges.

  8. Serve: Let them cool slightly—they will crisp up more as they cool!
