About 15 years ago; I developed an interest in USA style BBQ, and as you do - went online to learn more. Whilst learning lots about Low n Slow cooking I kept hearing a term that was unfamiliar to me something called Liquid Smoke? I recall thinking - how can smoke be liquid?
I came to know that the Americans at that time were way ahead of us Aussies, and were using all sorts of tools, flavourings and ideas that, I at least was unaware of. And Liquid Smoke, used commerciallly in all sorts of products like Bacon, Ham, Sausage etc - was simply real smoke, captured and distilled into a liquid, so that some of the supposed health concerns around the tars and resins in woodsmoke were eliminated or at least dramatically reduced.
Our Story
So began my Liquid Smoke journey! While I loved using the various kinds of woods to smoke the many kinds of Sausage and BBQ I had begun making - I had now learned that Liquid Smoke was a much faster, cleaner - and apparently safer way to add that flavour that all of us love and have loved for thousands of years!
So I searched for suppliers, found some and began re-selling one particular brand on eBay for a number of years. As destiny would have it, there was a change of ownership in that supplier and some changes began that I was not satisfied with; so I looked hard and found what I (and my clients) believe is the best tasting Liquid Smoke in Australia today!
